OUR PASTE

ur dough is made with a liquid pre-fermentation method called POOLISH: it is made of water, flour and yeast.
After fermenting for between 16 and 24 hours, our POOLISH will integrate the dough batch, which will in turn rest for between 24 and 36 hours.
Resting time is essential because it allows the yeast to work properly and the starch in the flour to develop all its flavors.
A pre-ferment or leaven of this type gives the dough additional aromas and better digestive flexibility compared to a classic pizza dough.
